Molli, native to the Peruvian Andes, gets its name from the Quechua word for tree. It is also known as Schinus molle and grows throughout the Americas, including Southern California where it is sometimes seen lining the streets. The tree produces peppercorns that are used for culinary purposes, although they are unrelated to the true pepper plant. The essential oil of Schinus molle is steam distilled from its fruits or berries in Peru. It has a warm and spicy aroma that is brighter than black pepper. The oil is described as fresh, woody-peppery, and warm-spicy, with a sharp or dry, smoky-woody undertone. The odor improves with aging, and the flavor is warm and biting but less rich than black pepper. It shares some similarities with angelica seed oil, juniper berry oil, and elemi oil. In perfumery, Schinus molle fruit oil is used for its woody-spicy, warm, and powdery notes. It blends well with other ingredients such as oakmoss, clove, and nutmeg.
